Andy Roo's ™ Creole Gumbo Seasoning

Flavor to savor in that classic dish - Gumbo!

Recipe idea: In a heavy pot, brown 1 cut up chicken and 1lb. andouille (or your favorite local smoked sausage). Remove from pot. In the same pot, add 3/4 cup oil and 2/3 cup flour to make a 'roux'. Cook over medium heat until dark brown, stirring constantly. Turn off heat and gradually stir in 2 quarts water. Bring to a rapid boil. Add chicken, andouille, 1 bay leaf and 4 teaspoons ANDY ROO'S CREOLE GUMBO SEASONING. Lower heat and simmer 1-1/2 hours. Serve over rice. Serves 6-10.

Ingredients: onion, garlic, green bell pepper, cayenne, black pepper, celery and other herbs and spices.

Juno and Maple Blues Award winner, Canadian blues legend BIG DAVE MCLEAN (Black Hen Records) returns to Hamilton for a rare and intimate show with long time friend and collaborator Raoul Bhaneja of Raoul and The Big Time as Mississippi Queen Foods.

Inspired to take up the Blues as the music of his life after watching a set by John Hammond Jr. at The Mariposa Folk Festival on a train trip from Winnipeg with his brother, Big Dave has become himself one of the most important and inspirational figures in the Canadian blues scene.

A mentor to Colin James, Jordan Cook and many more he has criss crossed Western Canada a fixture of the scene. Having toured Ontario with friend and Maple Blues Award winner Raoul and The Big Time in 2000, 2015 (PANAMANIA 2015 Pan Am Games) and 2017 at Koerner Hall (Down In The Delta) he returns for three shows in Southern Ontario.

This will be a rare opportunity to get up close and personal with one of the legends of the blues, all in one of the coolest venues around, Mississippi Queen Foods, under the care and hospitality of Connie Rouble, a big fan of Big Dave's from the 2015 show she co produced in Hamilton with Big Dave and Super Chikan.
