Stuffed Devilled Eggs  $2 per egg / 2 half pieces

Eggs cut into half sized pieces, and then stuffed with reslish, mustard, mayonnaise, garlic, and lightly seasoned.  

 

 

 

 

 

 

 

Boiled Peanuts $5 per 1/2 lb 

Southern delicacy of Valencia, green peanuts, boiled until soft, and served in buckets, or containers.  (Pronounced "bawd pee nutz", when Down South).  They are boiled with shells on, and plenty of salt, and have the consistency of a cooked chick pea.  Simply peel and eat.  

 

 

 

Catfish, Shrimp, Okra, & Sausage Gumbo $6 per person   

Creole style gumbo with U.S. Delta Farm Raised Catfish, shrimp, pork sausage, tomatoes, and okra, seasoned with Cajun seasonings and served over a bed of white rice.  

 

 

 

 

 

Chicken & Sausage Gumbo  $5 per person

Creole style gumbo with chicken thighs, smoked pork sausage, and tomatoes, seasoned with Cajun seasonings, and served over a bed of white rice.  

 

Corn & Crab Bisque $7 per person

Rich bisque made of crab meat, corn, fish stock, and cream. 

(Picture shown with sides of Coleslaw with Remoulade Dressing, and Buttermilk Cornbread Muffin).  

 

 

 

 

 

 

Blackened Chicken Skewers $2.00 per skewer

Chicken thighs blackened in a cast iron skillet with Cajun seasonings.  Cut into bite sized pieces, and served on bamboo skewers with a side of remoulade dipping sauce.  

                                                                      

 

 

Boiled Cajun Shrimp $35 per lb / approximately 35 shrimp per lb

Spicy, boiled Cajun shrimp with 'shells on', cooked with pork sausage, corn on the cob, and new potatoes, served with a side of remoulade dipping sauce. 

 

Blackened Shrimp .80 per shrimp 

Shrimp with 'tail on', blackened in a cast iron skillet, with Cajun seasonings.  10 shrimp per person is recommended for an entree portion size.  

 

Creole Crab Cakes $5 per crab cake / 12 cake minimum 

Oval cakes made of crab meat (lump and claw), breadcrumbs, mayonnaise, egg, and Creole seasonings.  Served with a side of remoulade sauce.

Popular New Orleans dish made of a light brown roux, tomatoes, shrimp, fish stock, and vegetables. Served over white rice. 

 

 

 

 

 

Buttermilk Fried Chicken  $4 per leg / $6 per thigh / $8 per breast

Chicken pieces soaked in buttermilk overnight, and then dredged in flour mixture, and fried to a mahogany brown, for a crunchy exterior.  

 

 

 

Fried U.S. Delta Farm Raised Catfish Fillets $8 per fillet

Catfish fillets coated in a lemon and Creole spiced, corn flour coating, and fried to a golden brown.

 

 

 

Crawfish Pie $30 per 9" pie / 6 servings 

Roux based crawfish filling, with Creole vegetables, prepared in a pastry pie crust.

Popular New Orleans dish of 'slow cooked' red kidney beans, with pork sausage.  Seasoned with Cajun spices, and served over a bed of white rice.

Crawfish Etoufee $12 per person

Stew like sauce made of brown roux, fish stock, and crawfish tail meat.  Served over a bed of white rice.  (Etouffee means to smother).  

 

 

 

 

BBQ'd Shrimp $.90 per shrimp

Shrimp with 'tail on', cooked in a shrimp stock, and wine reduction, with Creole seasonings, and then finished with heavy cream.  (Shrimp are cooked in a cast iron skillet, and not on a grill.  However, this dish is referred to as 'BBQ'd', Down South.  10 shrimp per person is recommended for an entree size portion.  

 

 

Chicken & Dumplin's  $6 per person / 10 minimum

This old, Southern favorite is best described as a thick stew of boneless chicken, chicken stock, and biscuit dough dumplings.  This is comfort food at its finest, and is best served with a plate of Buttermilk Biscuits.  

 

 

 

 

 

Chicken & Sausage Jambalaya $6 per person / $7 per person with shrimp

Classic, Cajun, spicy, dry rice dish with chicken, smoked pork sausage and the addition of tomatoes. Shrimp can also be added. 

 

 

 

 

 

Pulled Pork Sandwich  $12 each / 12 minimum

Smoked pork, pulled, and then finished with Memphis style BBQ sauce (sweet with mild heat).  Served on white, sandwich bun.

 

 

 

 

Fried Shrimp PoBoy Sandwiches  $12 each  / 12 minimum

Shrimp coated in lightly seasoned flour mixture, and fried to a golden brown, and served on homemade French loaf bread, with shredded lettuce, sliced tomatoes, and remoulade sauce.  

 

 

 

Hot Roast Beef PoBoy with Debris Gravy  $12 each  / 12 minimum

New Orlean style, thinly sliced, slow simmered, roast beef.  Served on homemade poboy bread, with plenty of messy gravy.  Dressed with remoulade sauce, shredded lettuce, and tomatoes. 

 

 

 

 

 

 

Creole Macque Choux

Southern vegetable stew of sweet corn, tomatoes, and peppers, seasoned with Creole seasonings.  

 

Black-eyed Peas $3 per person

Black-eyed peas cooked with garlic and bacon.

Green beans cooked garlic, bacon, and new potatoes. (Please note cannot be made as vegetarian).

White navy beans slow cooked, for serveral hours, with the Missisisppi Queen's Memphis style BBQ sauce (contains brown sugar and Steen's Cane Syrup), and bacon.

 

Baked Macaroni & Cheese $3.50 per person

Classic favorite of elbow macaroni and creamy cheddar cheese sauce, baked to a golden brown. 

 

 

 

 

 

 

Aunt Dixie's Sweet Potato Casserole $3.50 per person

Sweet potatoes cooked in a casserole of brown sugar and butter, topped with a chruncy pecan topping. 

 

Coleslaw with Remoulade Dressing $2 per person

Shredded purple and green cabbage, and carrot, dressed with Creole remoulade dressing.  

 

 

 

 

Potato Salad $3 per person

Creamy Southern style potato salad with mayonnaise, Creole mustard, boiled eggs, and sweet relish. 

 

 

 

 

 

 

Buttermilk Cornbread Muffins $1 per person

‘Melt-in-your-mouth’ cornbread muffins, made with plenty of butter, and buttermilk.  

 

 

 

 

Buttermilk Biscuits $2 per person

Made with plenty of butter and buttermilk, these Southern style biscuits are sure to be a favourite.

Mardi Gras King Cake  $45 each 

Authentic, New Orleans style, Mardi Gras King Cake, with plastic baby inserted, after baking.  Finished with traditional Mardi Gras colored, sanding sugars- purple, green, and gold.  (Approximately 15 servings per cake).  

 

 

 

Pecan Pie $20 per 9" pie / 6 servings

The Mississippi Queen's popular, Southern Pecan Pie, made with eggs, butter, pecans, Neilsen-Massey Madagascar Bourbon Vanilla Extract, sugar, and corn syrup, in a buttery pie pastry.  

 

 

 

Sweet Potato Pie  $15 per 9" pie / 6 servings

Sweet potato, dessert filling, in a buttery crust.  Similar to pumpkin, but not as 'earthy' as pumpkin.  Lots of sweet potatoes are grown in Mississippi.  Hence the reason they ended up in a dessert.  Cinnamon, nutmeg, and vanilla, give it a rich flavor.

Red Velvet Cupcakes $2.50 each / 12 minimum

These cupcakes are a festive, favorite amongst Southerners.  They are made with red food coloring, cocoa, buttermilk, and cream cheese icing.  

 

 

 

 

Pecan Pralines $2 each / 10 minimum

Pecan pralines are the signature candy of New Orleans, and have been referred to as ‘discs of pure joy’. They are made using butter, brown sugar, vanilla, milk, and pecans.

 

 

 

 

Banana Pudding  $15 for 9" round pan

Southern style banana pudding made with a vanilla wafer crust and meringue.  

 

 

 

 

Mississippi Mud Cake  $12 for 9" round pan

This chocolate cake is mean to be messy and gooey, similar to the mud, along the banks of the Mississippi River.  This dessert will most certainly take care of any sweet tooh you may have!

 

 

 

Bread Pudding with Buttered Rum Sauce $4 per person

French loaf bread, cut into pieces, and soaked in butter, egg, and milk mixture, and then baked with pecans, cinnamon, and nutmeg, to a golden brown.  Served with a warm, buttered, rum sauce.  

 

 

 

Southern Vanilla Ice Cream $2 per person / 10 minimum

This homemade, Southern vanilla ice cream is rich, and taste like custard.  Excellent topping for pies, or cobblers.
