Boiled Cajun Shrimp

Cajun boiled ‘shell on’ shrimp, served with spicy seafood dipping sauce.

Creole style gumbo with catfish, shrimp, and pork sausage, seasoned with Cajun seasonings, and served over steamed white rice.

 

Corn & Crab Bisque

Rick, creamy bisque of corn and crab claw meat.

 

 

 

Creole Crab Cakes

Oval, fried cakes of lump crab meat, breadcrumbs, and Creole seasonings, served with side of Creole remoulade dipping sauce.

Creole Red Beans

Authentic, ‘slow cooked’ red kidney beans, cooked with pork sausage, and seasoned with Cajun spices, served over white rice (Can be cooked without pork sausage, as a Vegetarian offering).

Spicy, Cajun rice dish with chicken, shrimp, smoked pork sausage, and tomatoes (Can be cooked without shrimp).

 

 

 

 

 

Chicken & Dumplings

Referred to as ‘Southern Gold’, this dish contains tender pieces of chicken cooked with flour dumplings, in a creamy type of stew.

 

 

 

BBQ’d Shrimp

Despite the name, these shrimp are not prepared on a BBQ grill, instead they are prepared in a skillet, cooked in a ‘slowly reduced’ Creole sauce.

 

 

Blackened Catfish

U.S. Farm Raised catfish fillets coated with spicy, Cajun seasonings, and prepared in cast iron skillet.

Boneless fillets of chicken coated with spicy, Cajun seasonings, and prepared in cast iron skillet.

Shrimp cooked in tomato base Creole sauce, and served over white rice.

Aunt Dixie’s Sweet Potato Casserole

Sweet potatoes are really sweet with her prized recipe- cooked with brown sugar, butter, and pecans.

Cold salad, side item of cooked potatoes, mayonnaise, Creole mustard, and and Creole seasonings.  This is a staple on many a Southern table.

Melt in your mouth, homemade Southern pecan pie with buttery crust.

 

 

 

 

Red Velvet Cupcakes

These cupcakes are a festive favourite amongst Southerners. The combination of red food colouring and cocoa provides a deep, red colour; buttermilk is the key ingredient in keeping moist; and it is then finished with cream cheese icing and red sanding sugar.

 

 

 

 

 

 

Pecan Pralines

Pecan pralines are the signature candy of New Orleans, and have been referred to as ‘discs of pure joy’. They are made using butter, brown sugar, vanilla, milk, and pecans.

This very simple, Southern version is made with ‘packaged’ vanilla wafers, and is a popular favourite dessert for any gathering.
